Isn't Golduck modeled after a kappa? It's Red/Blue dex entry says "It is often mistaken for the Japanese monster, kappa."

Venusaur is a cross between a dinosaur and a flower, I guess.

Squirtle is a turtle, but I prefer those "on all fours" and "flippers instead of feet" kind of turtles.

As for penguins, I personally think that Delibird is one.

The defining characteristic of the Kappa is the water pail on its head. It only has so much water in the pail and if it all fails out the kappa dies. Because of this, Lombre and Ludicolo are more obviously based on the Kappa. Kappas also modelled to resemble ducks sometimes, hence Golduck, although Golduck lacks the water pail on its head, and kappas can have characteristics of turtles too. Lombre is a more accurate recreation of a Kappa than its evolution or Golduck.

Some other notes...
-Again, Arcanine is a shishi, so it's not particularly a lion, dog, tiger, or dragon - it's a mixture of all four. The lion is evident from the mane, the dog is evident from the nose, the tiger is evident from the stripes, and the dragon is evident from Arcanine's legendary status and its ability to learn Dragon attacks. The shishi is another mythical Japanese (or Chinese) creature, like the kappa.

-RE: Hippo Pokemon. Personal belief, but Slowpoke and Slowbro are based partially on hippos, with the Shellder lore of the evolutions being based on hermitcrabs. At least the structure of Slowpoke/bro/king's heads/faces are modelled very closely after a hippo's. And they have the cute little hippo ears!

-Psyduck is nothing like a platypus. If you've even seen pictures of platypi, that much should be obvious.
